Cranberry and Pear Relish

Ingredients
3 pears (Bartlett, Bosc or Anjou), peeled and cut in 1-inch dice
1 cup fresh cranberries
1/2 cup sugar
1 tablespoon rice vinegar
Directions
Combine all ingredients in a medium-size saucepan. Bring mixture to a boil, then reduce to a simmer. Cover with lid and stir occasionally for 5 minutes or until pears are soft but still holding their shape. Remove from heat and allow to cool. Place in a covered container and refrigerate.
May be prepared 3 days in advance. Makes 4 servings.
