Tart Apple and Golden Raisin Relish with Cinnamon

Ingredients

3 medium-size Granny Smith apples, peeled and cut into 1-inch dice
1/2 cup sugar
1/2 tablespoon ground cinnamon
1/4 cup apple cider vinegar
1/2 cup golden raisins, soaked in warm water for 20 minutes, then drained


Directions

Combine diced apples, sugar and cinnamon in a medium-size saucepan. Bring mixture to a boil, then reduce to a simmer. Cover with lid and stir occasionally for 3 minutes or until apples are soft but still holding their shape. Add vinegar and raisins; cook for 2 minutes, uncovered. Stir; allow to cool. Refrigerate covered.

May be prepared 1 week in advance. Makes 4 servings.
