Tasty Tortilla Roll-Ups
Ingredients
Four 10-inch flour tortillas
2 tablespoons low-fat salad dressing or mayonnaise
1/2 cup chunky salsa
4 ounces smoked turkey or roast beef, slice
1/3 cup low-fat Cheddar cheese, shredded
1/2 cup thin strips red bell pepper
1/4 cup green onions, sliced
2 tablespoons black olives, sliced
Directions
Spread salad dressing on tortillas; spread salsa over salad dressing. Top with the meat, cheese and vegetables. Roll-up and serve, or heat 1 minute in microwave on medium power.
After rolling, tortillas may be wrapped individually in plastic wrap and refrigerated.
Serve whole, cut in half, or for bite-sized snacks, cut in 1-inch slices. Makes 4 large servings, or 8 appetizer servings.
