Ingredients

1 cup yellow corn meal
1 cup flour
1/4 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
1 cup milk
1 egg
1/4 cup melted butter, plus butter for baking pan

Directions

Preheat oven to 400 degrees and butter an 8-inch square baking dish.

Mix the corn meal, flour, sugar, salt and baking powder. Put the milk in a cup or bowl, add the egg and beat lightly. Add the melted butter and beat again. Pour the milk mixture into the flour mixture and combine, beating for about a minute. Don't overbeat.

Pour the batter into the baking pan. Bake for 20 to 25 minutes, until a toothpick poked into the center comes out clean. Cool. Makes 8 to 12 pieces. From: "Adventures in Corn Meal Cookery," Quaker Corn Meal Company, in "The Old-Time Brand-Name Cookbook," by Betty Crumpacker, Smithmark Publishers.
