BBQ Turkey Quesadilla

Ingredients

2 cups chopped cooked turkey
1/2 cup barbecue sauce
1/2 cup chopped green or red bell pepper
1/4 cup chopped fresh cilantro, optional
1 teaspoon dried onion flakes
6 10-inch tortillas
1 to 1 1/2 cups cheddar cheese

Mix turkey, barbecue sauce, peppers, cilantro and onion. Spray a skillet with non-stick cooking spray and place a tortilla on the pan. Spread with about 2/3 cup of the turkey mixture, leaving about 1 inch around the edge. Place skillet over medium heat and sprinkle 1/3 to 1/2 cup cheese over turkey mixture, extending the cheese to the edge of tortilla. Top with another tortilla. Press down slightly to seal edges together as cheese melts. Allow to cook about 1 minute, until the bottom is lightly browned and the cheese is melted. Carefully turn over with a spatula and brown the other side for an additional minute. Repeat with remaining tortillas, turkey and cheese.
Makes 3 large servings (4 quarters) or 6 smaller servings (2 quarters). To serve, cut in quarters with a pizza cutter. These are best served hot.


Directions

Variation: For BBQ Turkey Pizza, spread turkey mixture on two French bread halves, sprinkle with cheese and place under an oven broiler about 3-4 minutes, or until cheese is bubbly.
