Sloppy Joe Casserole
Ingredients
4 tablespoons olive oil
2 onions, chopped
2 cloves garlic, minced
6 carrots, grated
2 pounds lean ground beef
2 cups ketchup
4 tablespoons molasses
1 tablespoon chili powder
1 tablespoon Worcestershire sauce
Salt and pepper to taste
4 cups cheddar cheese, grated
1 package dinner-roll dough
2 tablespoons melted butter
Preheat oven to 375 degrees. In a large skillet, heat oil and saute onions, garlic and carrots until soft. Add ground beef. Cook until browned. Stir in ketchup, molasses, chili powder and Worcestershire sauce. Season with salt and pepper to taste. Gently simmer 15 minutes.
Remove from stove, transfer to a 3-quart casserole dish and sprinkle with cheese. Separate dinner-roll dough and place on top of cheese to cover casserole. Brush rolls with melted butter and sprinkle with sesame seeds. Bake uncovered until rolls are golden brown, about 25 minutes. Serves 8.
Directions
Variation: Substitute 2 cans of sloppy joe sauce for the ketchup, molasses, chili powder and Worcestershire sauce.
