Red, White and Blueberry Rice

Ingredients
1 cup Texmati or Basmati rice
1 1/2 cups chicken broth
Salt and pepper to taste
1/2 cup chopped red bell pepper
1/2 cup fresh or frozen blueberries
Directions
Cook rice according to package directions but replace water with chicken broth. Add salt and pepper to taste.
Add chopped red bell pepper and blueberries to the pot of cooked rice, stir to blend. Place rice mixture back on burner and heat 2-3 minutes to warm peppers and blueberries. Serve immediately, or store covered in refrigerator for up to 2 days.
