Cherry Couscous Salad

Ingredients
1 1/2 cups vegetable broth or water
1 1/2 cups couscous
2 cups pitted fresh sweet cherries
1 16-ounce can black beans, rinsed and drained
1/2 cup chopped green onions
1/2 cup chopped parsley
1 11-ounce can corn, drained
1 cup chopped green pepper
Bring broth to a boil. Stir in couscous. Cover and remove from heat. Let stand 5 minutes; fluff with a fork. Add remaining ingredients; toss with Lime Dressing. Serves 8.
Directions
Lime Dressing: Combine 1/2 cup lime juice, 3 tablespoons olive oil, 1 teaspoon sugar, 1/2 teaspoon crushed oregano and 1/2 teaspoon chili powder; mix well.
