Southwest Rice Bowl

Ingredients
1 16-ounce can black beans, rinsed and drained
1 cup pitted and chopped fresh sweet cherries
2 tablespoons chopped cilantro
2 tablespoons chopped onion
1 tablespoon lime juice
1 tablespoon chopped jalapeno pepper
1 1/2 teaspoons garlic salt, divided
1/4 teaspoon ground pepper
4 cups hot cooked brown rice
12 ounces boneless skinless chicken breast, sliced in strips
2 teaspoons olive oil
2 cups shredded lettuce
4 sprigs cilantro
Directions
Combine beans, chopped cherries, cilantro, onion, lime juice, jalapeno and 1/2 teaspoon garlic salt to make a salsa. Mix well and set aside. Season chicken with remaining garlic salt and pepper; saute in oil. Portion 1 cup brown rice in four individual bowls. Top each with 1/4 cup salsa, 1/4 of chicken (about 1/3 cup), 1/2 cup lettuce and sprig of cilantro.
