Apple Salsa with Cilantro and Lime

Ingredients
Preparation 5 minutes, refrigeration time 1/2 hour
2 cups diced Cameo apples
1/2 cup diced red onion
1/2 cup (1 large) finely chopped Anaheim chili pepper
1 jalapeno pepper, finely chopped (optional)
1/4 cup lime juice
1 tablespoon chopped fresh cilantro
1/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions
Combine all ingredients in large bowl and mix well. Cover with plastic wrap and refrigerate 1/2 hour or until ready to serve. Makes: 4 cups.
Nutrition information per 1/2 cup serving): 28.2 cal., 7.2 g carbo., 1.2 g dietary fiber, 0.2 g total fat, 61.3 mg sodium.
