Apple Cranberry Tart
Ingredients
pastry for one 10-inch pie crust store-bought or homemade
zest and juice of 1 large orange
2 Granny Smith or pippin apples, peeled, cored and grated
1 cup fresh cranberries
1/2 cup raisins
1 cup sugar
1/2 cup brown sugar
1 tablespoon instant tapioca
1/2 teaspoon cinnamon
1/8 teaspoon ground cloves
1/4 cup chopped walnuts
whipped cream, optional
Directions
Place the pie crust in a 9-inch tart pan with a removable bottom. In a medium bowl, combine the orange zest, orange juice, grated apples, cranberries, raisins, sugar, brown sugar, tapioca, cinnamon and cloves. Toss well. Place in the prepared pie crust. Sprinkle on the chopped walnuts. Bake on a foil-lined baking sheet in a preheated 400 degree oven for 15 minutes, reduce heat to 350 degree and bake 30 minutes more. Allow to cool to room temperature before removing outer rim. Serve with whipped cream, if desired. Serves 8.
