Easy Pudding Puffs
Ingredients
1 package (6-serving size) chocolate or vanilla flavor instant pudding
3 cups milk
1 cup water
1/2 cup butter
1 cup all-purpose flour
1/2 tablespoon salt
4 eggs
3 ounces semisweet chocolate, melted and cooled, or sifted powdered sugar (optional)
Directions
Preheat oven to 400 degrees. Grease baking sheet. Set aside. Prepare pudding, using the three cups of milk, according to package directions. Cover and chill while preparing cream puffs.
In medium saucepan, bring water and butter to a boil. Stir in flour and salt. Cook, stirring occasionally, until mixture forms a ball. Remove from heat. Cool for 10 minutes. Add eggs to mixture and beat with an electric mixer on medium speed until smooth and glossy. Drop by rounded tablespoons onto prepared baking sheet. Bake about 30 minutes or until golden brown. Transfer to wire rack; cool completely.
Cut tops from puffs. Remove and discard soft dough from centers. Spoon pudding into puffs. Drizzle with melted chocolate or sprinkle with powdered sugar, if desired.
