Banoffee Pie

Ingredients

Banana and toffee combine to make banoffee pie in this quick-fix version.
1 can sweetened condensed milk
1 pre-baked crumb crust for a 9-inch pie
3 bananas
1 tablespoon lemon juice
1 cup heavy whipping cream
1 teaspoon vanilla extract or instant espresso powder
3 tablespoons confectioners sugar, sifted


Directions

Pour the milk into the top of a double boiler. Cover. Cook for about 1 1/2 hours until it thickens and turns a deep caramel color (this is "dulce de leche"). Cool. Spread the dulce de leche over the pie crust.

Slice the bananas and sprinkle with lemon juice to prevent discoloration. Arrange the bananas atop the dulce de leche.

Whip the cream with the vanilla or espresso powder, gradually adding the sugar, until soft peaks form. Top the pie with the whipped cream. Refrigerate at least 2 hours before serving. Serves 8.
