Breakfast Burritos

Ingredients

4 eggs
1/4 cup milk
1/4 teaspoon salt
Dash freshly ground pepper
1 teaspoon butter
1 tablespoon real bacon bits, cubed ham or leftover sausage
1-2 tablespoons fresh chives, chopped
2 ounces ( 1/2 cup) Colby-Jack cheese, shredded
4 whole grain tortillas

Crack the eggs open into a bowl. Add the milk, salt and pepper. Whisk to combine.
Heat a nonstick skillet over medium heat. Add the butter. When the butter is melted, add the egg mixture to the pan. Let it cook about 1 minute before stirring. Stir the egg mixture with a spatula and continue cooking 3-4 minutes until the eggs are firm but still moist, stirring occasionally. Stir in bacon bits and chives. Remove the pan from the heat.
To make the burritos: Spoon about 1/3 cup of the scrambled egg mixture down the center of 1 tortilla. Top with 2 tablespoons of the cheese. Fold the sides of the tortilla over eggs.
