Oatmeal-Peanut Butter Fruit Drops

Ingredients

3/4 cup unsweetened shredded coconut
3/4 cup dried fruit (about 15 apricots or 1 cup craisins)
1/4 cup crushed toasted almonds or peanuts
1 3/4 cup peanut butter
1/4 cup honey
3/4 cup instant oatmeal
1/4 teaspoon salt
1 teaspoon cinnamon


Directions

1. Wash your hands.

2. Measure coconut into a small bowl; set aside.

3. Cut apricots into small pieces with kitchen scissors.

4. Crush or chop almonds or peanuts (use chopper).

5. Mix peanut butter and honey in a larger bowl with a spoon.

6. Measure and stir in the fruit, oatmeal, salt, cinnamon and nuts.

7. Drop by spoonfuls into coconut and roll into 3/4-inch balls until covered well.

8. Chill until firm.
