Peach Pecan Compote

Ingredients
Vegetable cooking spray
4 tablespoons chopped pecans
1 teaspoon brown sugar
1/2 cup fresh orange juice
1/4 cup pure maple syrup
1 teaspoon pure vanilla
1 1/2 teaspoon orange zest
6 fresh peaches, peeled and sliced or chopped
Directions
Spray baking dish with cooking spray and arrange pecans on dish. Sprinkle brown sugar over pecans and microwave on high or bake at 425 degrees until lightly toasted, set aside. In a pan combine orange juice, maple, syrup, vanilla and orange zest. Bring to boil then remove from heat. Place peaches in a large bowl and pour orange juice mixture over them. Stir gently and then chill for 1 hour. Serve on a plate or in a bowl and sprinkle with toasted pecan pieces.
