Grilled Cheese Sandwiches
Author: "American Classics," by Cooks Illustrated (Boston Common Press)
Ingredients
3 ounces mild cheddar cheese, grated on large holes of a box cutter (about 1 cup)
4 slices firm white sandwich bread
2 tablespoons butter, melted
Directions
Heat a heavy 12-inch skillet over low to medium-low heat. Meanwhile, sprinkle a portion of the cheese over two bread slices. Top with with a remaining bread slice, pressing down gently to set.
Brush the sandwich tops with half the melted butter. Place each sandwich, buttered-side down, in the skillet. Brush the remaining side of each sandwich completely with the remaining butter. Cook until crisp and deep golden brown, 5-10 minute per side, flipping the sandwiches back to the first side to reheat and crisp, about 15 seconds. Serve immediately.
