Pizza Boats
Ingredients
Start to finish: 20 minutes
Servings: 4
2 cups bagged baby spinach leaves
10 oil-packed sun-dried tomato halves
1 cup shredded Cheddar cheese
1 precooked chicken sausage or 4 slices deli meat (such as chicken breast or ham)
12-inch whole-grain baguette
Directions
Get ready: Preheat the oven to 400 F.
Step 1: Have an adult set up the food processor with the cover on and the chute open. Drop the spinach leaves down the chute, then the sun-dried tomatoes, half of the cheese and the sausage.
Step 2: Have an adult use a serrated knife to cut the baguette in half lengthwise. Use your hands to scoop out the insides of the bread. The baguette should look like two boats when you're done.
Step 3: Drop the insides of the bread (the stuff you scooped out) down the chute of the food processor. Close the chute and process until everything is finely chopped, about 30 seconds.
Step 4: Have an adult open the food processor and remove the blade. Use your hands to scoop out the mixture and stuff half of it into one bread boat and half in the other.
Step 5: Sprinkle the rest of the cheese over the stuffed boats. Place the two boats on a baking sheet and have an adult put them in the oven. Bake for 10 to 12 minutes, or until the cheese is melted and starts to turn brown.
Step 6: Have an adult cut each boat in two.
