Maple-Kissed Broccoli

Ingredients
3-4 large bunches of broccoli
1 red bell pepper
1/4 cup water
1/2 cup maple syrup
1/4 cup ( 1/2 stick) butter or margarine
1/2 cup pine nuts, toasted
Salt and pepper to taste
Directions
Cut broccoli into florets. Slice pepper in long slivers or dice. Place both in a large microwaveable casserole dish. Add water. Partially cover the bowl with a lid, leaving a little room for steam to escape. Microwave on high for 8-10 minutes. Meanwhile, place butter and syrup in a microwaveable cup and microwave (while the broccoli is cooking) about 30 seconds, or until butter is melted. Stir well.
To the broccoli, add pine nuts, syrup mixture, salt and pepper, gently tossing to coat broccoli evenly. Microwave, partially covered, an additional 5 minutes, or to desired tenderness. Serves 8-10.
Note: This dish is better freshly cooked. If you're traveling, it's best to transport the uncooked vegetables in a casserole dish and do the cooking at your destination.
