Grandma Nielsen's Corn Pudding

Ingredients

1/2 onion, chopped
1/2 green pepper, chopped
1 tablespoon butter
2 tablespoon flour
1 cup milk
1 egg, beaten
1 teaspoon salt
1/4 teaspoon paprika
1/8 teaspoon dry mustard
2 cups whole corn
1/2 cup bread crumbs browned in 1 tablespoon butter


Directions

Saute onion and green pepper in 1 tablespoon butter over medium heat for about 5 minutes, or until tender. Add flour and mix well. Add milk and egg and stir together. Add remaining ingredients (except bread crumbs) and mix until slightly thickened. Put in a baking dish and top with buttered bread crumbs. Bake at 400 degrees for 20 minutes. Serves 6-8.

Note: If doubling the recipe, make sure it is cooked for about 35 -40 minutes or until the middle looks set.
