Banilla Blueberry Bread

Ingredients

1 1/3 cups plus 1 teaspoon all purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
5 tablespoons butter, room temperature
1/2 cup sugar
1 cup low-fat banana-flavored yogurt (recommended: Stonyfield Farm Banilla)
2 eggs
1 small banana, peeled, mashed
1/2 cup frozen blueberries


Directions

Preheat oven to 350 degrees and grease loaf pan. Combine 1 1/3 cups flour and the other dry ingredients and mix well. In a separate large bowl, combine butter and sugar and beat on high for 2 minutes.

Gradually incorporate mixture of dry ingredients, followed by the yogurt, eggs and mashed banana. In a small bowl toss frozen blueberries with 1 teaspoon flour to coat and gently fold into the batter. Pour batter into greased loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let cool on a baking rack before removing pan. Makes 1 loaf.
