Pierre's Spring Chicken Soup

Ingredients

1/2 pound chicken breast
8 cups good chicken stock
8 ounces unsweetened coconut milk
2 ribs celery, sliced
3 tablespoon grated ginger
1 teaspoon salt
1 teaspoon black pepper
1 bunch cilantro, chopped
1/4 cup sliced toasted almonds


Directions

Dice chicken breast. Heat stock to a simmer and add coconut milk, celery, ginger and chicken. Simmer 15 minutes, add salt, pepper and cilantro. Ladle into bowls and top with almonds. Serves 8-10.
