Grilled Gruyere Cheese Sandwiches with Onions and Dried Plums
Ingredients
(Preparation 10 minutes, cooking time 25 minutes)
1 teaspoon butter
1 medium onion, sliced
1/4 cup (about 1 1/2 ounces) finely chopped pitted dried plums
1 tablespoon Dijon mustard
4 ounces Gruyere cheese, thinly sliced
4 slices light rye bread
No-stick cooking spray
Directions
In a large nonstick skillet, melt butter over medium-high heat. Add onion; cook and stir 10 minutes or until golden brown in color. Add dried plums and continue to cook until heated through. Remove from heat; stir in mustard.
To assemble sandwiches, layer the onion mixture and then the cheese evenly on two slices of bread; cover each with a second slice of bread. Generously spray outside of both sandwiches with cooking spray. Heat large nonstick skillet over medium-high heat. Cover. Cook approximately 2 minutes on each side or until bread is light brown and cheese has melted. Makes 2 sandwiches.
