Butterscotch Pie

Ingredients

1 baked 9-inch pie shell
1/3 cup flour
2 cups milk
2 eggs, separated
1 teaspoon butter
1 teaspoon vanilla
1/2 teaspoon salt
1/4 cup white sugar


Directions

In microwaveable bowl, mix flour, brown sugar and salt. Whisk egg yolks and milk and add flour mixture. Cook in microwave 90 seconds; remove and whisk. Return to microwave and continue cooking, whisking every 45 seconds for 5 or 6 minutes or until desired thickness is reached. Stir in butter and vanilla. Pour into baked pie shell.

Top with meringue. Beat egg whites until soft peaks form. Gradually beat in 1/4 cup sugar until stiff peaks form. Place on pie and bake at 425 degrees F until lightly browned, about 5 minutes.
