Hermit Bars

Ingredients

1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
3/4 cup butter, at room temperature
1 cup granulated sugar
1/4 cup unsulphured molasses
2 eggs
1/4 cup milk
3/4 cup raisins


Directions

Preheat oven to 350 F. Butter and lightly flour a 9-inch by 11-inch baking pan.

Sift together the flour, baking soda, allspice, cinnamon and salt. Set aside. Cream together the butter, sugar and molasses until light and fluffy. Scrape the bowl to incorporate all ingredients fully. Add the eggs, one at a time, blending thoroughly into the batter. Add the milk and blend well. Stir in the sifted dry ingredients until just combined. Stir in the raisins gently.

Spread the cookie batter evenly in the prepared pan and bake for 20 to 25 minutes or until the center springs back when pressed with a fingertip. Allow the cookies to cool in the pan before cutting into bars. Makes 36 bars.
