Grilled Corn and Black Beans

Ingredients
1/2 teaspoon olive oil
3 tablespoons minced red onion
1 garlic clove, minced
1 small jalapeno, seeded and minced
1 1/2 cups grilled corn kernels
1 1/4 cups cooked black beans
1/4 cup tomato, seeded and diced small
1/2 tablespoon fresh lime juice
1/4 teaspoon salt
1/2 tablespoon chopped fresh cilantro
Directions
Heat the olive oil over medium heat in a large saute pan. Add the onion, garlic and jalapeno. Saute until the onions are translucent. Add the corn, beans, tomato, lime juice and salt. Toss until the mixture is hot. Remove from the heat and stir in the cilantro. Makes 4 to 6 servings.
