Caribbean Fruit Salsa

Ingredients

1 honeydew melon, peeled, seeded and diced
1/2 cantaloupe, peeled, seeded and diced
1 pineapple, peeleds, cored and diced
1 papaya, peeled and diced
1 mango, peeled and diced
1 red pepper, seeded and diced
1 green pepper, seeded and diced
1 red onion, diced
1/2 teaspoons chopped garlic
1/2 teaspoons cumin
1/2 teaspoon salt
1 tablespoon lime juice
2 teaspoons olive oil
1/2 tablespoon coarse black pepper
1/2 bunch cilantro, stemmed and chopped
2 jalapanos, seeded and finely diced


Directions

In a large mixing bowl, mix all ingredients together. Allow to stand overnight. Makes 4 cups.
