Eve's Pudding
Ingredients
1 pound 2 ounces cooking apples, peeled, cored and sliced
Juice of one small lemon
1/2 cup granulated sugar
1/4 cup unsalted butter
1/4 cup superfine sugar
1/4 teaspoon vanilla extract
1 egg
3/4 cup self-rising flour
Yield: 4 servings
Directions
Preheat oven to 325 degrees. Lightly grease a 1-quart souffle dish. Layer apples in bottom and sprinkle with lemon juice and granulated sugar.
Cream the butter with the superfine sugar and vanilla until pale and soft. Beat in the egg, adding a little of the flour to keep the mixture from curdling. Fold in the remaining flour.
Spread the mixture lightly over the fruit. Bake 1 to 11/4 hours or until the pudding has risen and is set. Adapted from "Le Cordon Bleu: Dessert Techniques" by Laurent Duchene and Bridget Jones.
