Mediterranean-Style Hummus with Pita Chips
Ingredients
6 cups garbanzo beans or chick peas
1 tablespoon salt
2 tablespoons lemon juice
1 1/4 cups olive oil
1/2 cup pine nuts (optional)
1/2 cup diced yellow onion
1/4 cup water
3/4 cup sesame oil
2 tablespoons minced fresh garlic
2 bags of pita bread
1 tablespoon seasoning salt
Slice pita bread into triangles and lightly brush with olive oil. Sprinkle with seasoning salt. Bake at 350 degrees about 12 minutes, or until desired crispness. In a food processor or blender combine the garlic, onions, pine nuts, salt, lemon juice and water. Blend on high until semi-smooth. Add garbanzo beans and oil and process until smooth. Serve with pita chips.
Directions
Variation: Add 2 tablespoons Thai chili paste for a wonderful, unusual zip.
