Zesty Lemon Marinade

Ingredients
2 roma tomatoes, seeded
2 cups olive oil
1/2 cup balsamic vinegar
2 tablespoons red wine vinegar
1 bunch cilantro, chopped
3 fresh garlic cloves, minced
2 lemons, juiced
Salt and pepper to taste
Directions
Seed and dice the tomatoes. Chop the cilantro and reserve with the tomatoes. Mix remaining ingredients together and whisk until the oil and vinegar combine. Add the reserved tomatoes and cilantro and gently mix. Serves 12.

NOTE: This marinade is very versatile and is great for all grilling applications. It doubles as a light salad dressing.
