Cranberry Salsa (or Mock Caviar)

Ingredients
3 cups dried and sweetened cranberries, chopped fine
3 cups scallions, chopped fine
1 cup fresh lime juice Fresh ground pepper, to taste
Directions
Mix cranberries and scallions. Stir in lime juice, just until moistened. Stir in pepper to taste. Serve as spread on toast or crackers or on blinis topped with sour cream. Serves 12.
Each serving contains 18 calories, trace fat, 1g protein, 5g carb, 4mg sodium, 0 mg cholesterol.
