Fruit & Chicken Salad

Ingredients

Grated peel of 1/2 lemon
Juice of 1 lemon (3 tablespoons)
1 1/2 tablespoons vegetable oil
1 tablespoon honey
1/4 teaspoon each ground ginger and curry powder
1 cup shredded cooked light meat chicken
1 cup cooked orzo pasta (or rice or wild rice)
2 oranges, peeled and cut into bite-size pieces
1 apple, cut into bite-size pieces
2 medium bananas, cut into bite-size pieces
1 cup seedless green or red grapes, cut in half
1/2 cup celery


Directions

In large bowl, combine lemon peel and juice, oil, honey and spices. Stir in remaining ingredients; chill. Serve on salad greens and garnish with lemon wedges and fresh mint if desired. Makes six 1-cup servings.
