Flan

Ingredients

1/4 cup water
1/2 cup sugar
2 large eggs
2 egg yolks
1 (14 ounce) can sweetened condensed milk
1 1/2 cups milk
1 tablespoon vanilla extract


Directions

Preheat oven to 350 degrees.

In a saucepan, combine water and sugar on medium heat. Stir until sugar dissolves. Boil, without additional stirring, until syrup becomes golden. Immediately pour caramel syrup into a 1 1/2-quart, oven-proof mold, covering the bottom and some of the sides. In a bowl, whisk together the eggs, yolks, condensed milk, milk and vanilla. When mixture is smooth, pour through a fine strainer into the mold.

Place the mold in a baking pan and add hot water to the pan to reach halfway up the side of the mold. Bake for about 75 minutes at 350 degrees until it just sets.

Remove mold from pan and cool. Refrigerate until well-chilled, several hours or overnight. Run a knife around edge of mold to loosen flan. Invert the mold over serving platter. Serves 8-12.
