Caramelized Onion Quesadillas

Ingredients

1 tablespoon olive oil
1 medium red onion, thinly sliced
4 green onions, sliced
2 cloves garlic, chopped
1 teaspoon cumin
1/2 teaspoon cayenne powder
1/4 teaspoon dried oregano
1 tablespoon lime juice
Four large (10-inch) tortillas
2 cups reduced-fat shredded cheese (combination of cheddar, jalapeno, monetery Jack or other spicy cheese)
Optional: Salsa, guacamole and sour cream


Directions

Heat oil in skillet over medium heat and saute onions and garlic until softened, stirring occasionally, about 10 minutes. Stir in cumin, cayenne and oregano. Remove from heat and stir in lime juice.

Place two tortillas on a baking sheet. Spread the onion mixture equally on the two. Sprinkle with equal amounts of cheese. Top with remaining tortillas and bake at 400 degrees F for about 8 minutes until the edges are golden. Let stand 5 minutes and cut each nto sxiths with a pizza cutter. Garnish wit salsa, guacamole and a teaspoon of sour cream if desired. Makes 4 servings.
