Honey Biscuits

Ingredients

2 cups unbleached flour
1/2 cup honey
1 tablespoon baking powder
1/4 teaspoon baking soda
4 ounces reduced-fat cream cheese, softened
1 1/2 tablespoons margarine
2/3 cup reduced-fat chicken broth
1/4 cup snipped fresh parsley


Directions

Whisk together flour, honey, baking powder and baking soda.

Using a pastry blender or two knives, cut cream cheese and margarine until mixture resembles crumbs. Add broth and parsley. Stir until mixture forms soft dough. Place dough on well-floured surface and knead 10 to 12 times. Pat dough into an 8-inch square pan; cut into 2-inch squares. Place 2 inches apart on baking sheet. Bake at 450 degrees F for 8 to 10 minutes or until tops and bottoms are golden brown. Makes 16 servings. — Gary Pettigrew of Rockton, Ill.
