Fabulous Sopes

Ingredients

Preparation time: 5 minutes
Cooking time: 6 to 8 minutes

1 sope (found in the Latin or deli section of most grocery stores)
1 teaspoon oil

Brush sope with oil. Place on baking sheet and bake in preheated 375-degree oven for 6 to 8 minutes. Cool slightly. Fill with recipe of choice. Makes 1 serving.


Bean Cheese Filling

1/4 cup shredded Monterey Jack cheese
1 tablespoon prepared green chili salsa
2 tablespoons warm refried beans
2 teaspoons chopped tomatoes or red salsa

Fill sope with half of the cheese, the 1 tablespoon green salsa and the beans. Top with remaining cheese and the 2 teaspoons chopped tomato or red salsa. Serve with fresh carrots or zucchini sticks.


Tuna Cheese Filling

1/4 cup shredded mozzarella cheese
3 tablespoons water-packed tuna, drained and flaked
2 tablespoons shredded lettuce or cabbage
2 tablespoons prepared salsa
1 olive, sliced
Fresh tomato slices

Place half of the cheese in base of sope. In a small bowl mix tuna, lettuce and salsa. Mound mixture on sope. Top with remaining cheese and olive slices. Serve with fresh tomato slices. Makes 1 serving.


Cheese Jammers

1/4 cup each of shredded cheese such as Asadero, Manchego or Monterey Jack
2 teaspoons jam


Directions

Place prepared sope on cooking sheet and fill with cheese. Heat in 350-degree oven for 5 minutes or until cheese is melted. Cool slightly; top with jam. Makes 1 serving.
