Cookie Burgers
Ingredients
1 package golden sugar cookie mix (22.3-ounce package)
2 eggs
1/3 cup vegetable oil
1 teaspoon water
1 2/3 cups peanut butter chips (10-ounce package)
3/4 cup sweetened coconut flakes
5 to 6 drops green food color
Cocoa Filling (recipe below)
Heat oven to 375 degrees F.
Empty cookie mix into large bowl. Break up any lumps. Add eggs, oil and water; stir with spoon or fork until well blended.
With nut chopper or knife, chop peanut butter chips (do not use blender or food processor). Stir into cookie dough. Shape dough into 11/4-inch balls. Cover dough and refrigerate about 30 minutes if dough is too soft to handle.
Place balls 2 inches apart on ungreased cookie sheet. Bake in preheated 375-degree F oven for 9 to 11 minutes or until very lightly browned. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely. Stir together green food color and coconut to resemble lettuce. Frost bottom half of cookies with about 2 tablespoons Cocoa Filling to look like burgers. Sprinkle with green coconut. Gently press unfilled cookie on top to form bun. Makes about 1 1/2 dozen cookies.
Cocoa Filling
1/2 cup (1 stick) butter or margarine, softened
2 2/3 cups powdered sugar
1/2 cup cocoa
1/4 cup milk
1 teaspoon vanilla extract
Directions
In large bowl, beat butter; add powdered sugar, cocoa, milk and vanilla. Beat on low speed of electric mixer until all ingredients are moistened. Beat on medium speed until frosting is of spreading consistency. Makes about 2 cups filling.
