Rice Pudding

Ingredients

2 cups water
1/2 cup rice
3/4 teaspoon salt
1 cup half and half
5 cups milk
2 tablespoons butter
2/3 cup sugar
3 egg yolks, beaten
1 teaspoon vanilla extract
1/2 teaspoon almond extract
Cinnamon & nutmeg to taste


Directions

Simmer 2 cups water, 1/2 cup rice and 3/4 teaspoon salt until rice is soft. Add 1 cup half and half and 1 cup milk; simmer until a bit thicker. Add 2 cups milk and 2 tablespoons butter; simmer until thickened. Add remaining 2 cups milk and 2/3 cup sugar; simmer with lid on for 1 hour (stirring often).

Remove from heat and add 3 beaten egg yolks; cook for 5 more minutes. Add vanilla and almond extract; mix well. Sprinkle generously with cinnamon and nutmeg to taste. Serves 10.
