Lynne Whetton's Rosy Pear Pineapple Preserves

Ingredients
6 1/2 cups bartlett pears (about 7 medium pears)
1 tablespoon finely grated orange rind
6 tablespoons lemon juice
1 cup pineapple tidbits, drained
5 1/2 cups sugar
1/3 cup maraschino cherries, halved
1 teaspoon red food coloring
Directions
Cut pears into 1/2-inch wedges. Add orange rind, lemon juice, pineapple and sugar. Bring to hard rolling boil and boil 25 minutes or until thick. Add cherries and food coloring. Remove from heat and pour into sterilized jars. Seal with lids or paraffin wax.
