Mushrooms au Gratin

Ingredients

2 pounds mushrooms, washed, dried and sliced
4 tablespoons butter
2 tablespoons flour
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper
2/3 cup sour cream
1/2 cup chopped parsley
1 cup shredded Gruyere or Swiss cheese


Directions

Saute sliced mushrooms in butter for 1 minute. Cover skillet and cook until mushrooms are juicy, about 3 to 5 minutes. In a bowl, blend flour, salt and pepper with sour cream; mix gently with the mushrooms and heat to boiling. Immediately remove from heat; pour into a shallow ungreased 8x12-inch casserole. Combine parsley and cheese and sprinkle on top. Bake uncovered at 425 degrees F. for 10 minutes. Can be prepared ahead and baked later.

Note: to make uniform mushroom slices quickly and easily, use an egg slicer.
