Caldo Verde (Green Broth)
Ingredients
6 ounces linguica sausage or chorizo cut lengthwise and sliced
4 large white potatoes, peeled and sliced
4 tablespoons virgin olive oil
1 large onion, chopped
1 bay leaf
3 cloves garlic, whole
7 cups water
2 large leaves kale, rinsed and drained, stems removed, cut in thin long strips
1 teaspoon salt
Directions
In a small skillet over medium high heat cook sausage until brown. Drain on paper towel and set aside. Boil potatoes until soft. While potatoes are cooking, combine in stockpot the oil, bay leaf, garlic and water. Bring to boil until garlic is soft. Crush garlic. Drain and mash potatoes; add to broth. Return broth to a boil. Add kale and salt. Simmer 20 minutes, until kale is tender. Stir in sausage. Serves 6.
