Ingredients

9 cups water
1/2 cup cilantro
1/2 large white onion, diced
3 cloves garlic, crushed
1 bay leaf
3 tablespoons corn oil
1 tablespoon tomato paste
1 carrot, peeled and sliced
1 potato, peeled and diced
2 kale leaves, stems removed, cut in 1/2-inch strips
1 15 1/2 ounce Cannelli beans (white)
1/2 cup star pasta or (Prince) tubetti pasta
Salt and pepper to taste


Directions

In stockpot combine water, cilantro, onion, garlic, bay leaf, corn oil and tomato paste; bring to a boil. Add carrot, potato and kale; cook for 50 minutes, until vegetables are tender. Add beans, pasta and remaining 2 cups water; cook 30 minutes. Season with salt and pepper. Serves 6.
