Sopa De Funcho (Anise Greens Soup)

Ingredients
4 cups water
1/2 yellow onion, minced
1 clove garlic, minced
1 potato, cubed small
1/4 cup of linguica or Italian sausage, sliced
2 cups anise greens, chopped*
Salt to taste
Place onion, garlic, sausage and salt in water and bring to a boil. Add anise greens and potato; cover and cook until tender. Serve with Portuguese corn bread. Serves 4. Each serving contains 80 calories, 2g fat, 12g carb, 346mg sodium, 6mg cholesterol, 26% calories from fat. From Inocencia Goulart Pereira.

*NOTE: Florence fennel, (sometimes called anise) can be found seasonally in Italian markets. Fresh spinach may be substituted.
