Salad with Balsamic Drizzle

Ingredients

For salad:
4 ripe pears
8 leaves of romaine hearts
8 watercress stems and leaves
1/2 cup pomegranate seeds
4-6 ounces Maytag blue cheese

For Balsamic drizzle:
4 tablespoons best quality Italian Balsamic vinegar
8 green onions, white parts only, cut into 1/2-inch pieces and pressed in a garlic press
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon sugar
1/2 cup extra virgin olive oil


Directions

Slice pears; fan out slices on romaine leaf; cross pears with a watercress stem. Sprinkle with blue cheese and pomegranate seeds.

Combine all ingredients except oil. Slowly whisk in olive oil until mixture has smooth, even consistency. Using a turkey baster, suction up dressing and cross each salad twice with a drizzle of dressing. Serves 8.
