Citrus Snowball with Whipped Cream
Ingredients
2 bread loaf-size packaged angel food cakes
1 package Knox unflavored gelatin
1/4 cup cold water
1/2 cup boiling water
1 cup orange juice (Minute Maid juice in cartons)
1 cup sugar
Juice of 1 large lemon
1 pint and 1 cup whipping cream
Zest from 2 medium oranges
Directions
For cake:
Trim all edges off loaves of angel food cake. Slice into 1-inch thick slices. Tear cake into bite-size pieces. Line a deep bowl with overlapping 21/2-inch wide strips of waxed paper. Overlap strips over outside of bowl approx. 8-inches in diameter by 5-inches deep (this is so you can turn bowl upside down on a serving plate, remove bowl, peel off waxed paper strips and have a perfectly shaped half-ball sitting on the platter.)
Prepare gelatin mixture by dissolving 1 package Knox gelatin in 1/4 cup cold water, whisking slowly to blend. Add 1/2 cup boiling water to dissolve again. Whisk slowly until blended. Pour in orange juice, lemon juice and sugar. Mix well. Refrigerate mixture until partially set (mixture is set enough when a soft gelatin is forming; if you poured it out it would be a soft mass).
In separate bowl, whip 1 pint of whipped cream to stiff peak stage. Fold whipped cream into partially set gelatin mixture. Add zest of 1 orange as you stir. Put 1-inch layer of bite size angel food cake pieces in bottom of waxed paper-lined bowl. Pour some of the gelatin mixture over it just to cover. Press down with hands lightly to remove air.
Repeat cake/gelatin mixture until you reach top of bowl, pressing lightly between each layer. Cover top layer with sheet of waxed paper; cover with a plate as tightly possible (this keeps the cake from floating up). Refrigerate until serving.
To serve, turn molded cake out onto serving platter. Carefully peel off waxed paper. Whip remaining 1 cup whipping cream. Frost molded cake with part of whipped cream, reserving the rest to make dollops of cream around circle. Sprinkle remaining orange zest on dollops. Arrange orange slices around circle. Serves 16.
Each slice contains 263 calories, 15g fat, 32g carb, 231mg sodium, 52mg cholesterol, 49% calories from fat.
