Maine Muffins

Ingredients

Yield: 18 muffins

2 cups flour
3/4 cups sugar
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/2 teaspoon salt
3 eggs
1/2 cup vegetable oil
1/2 cup milk
1 1/2 teaspoon vanilla
2 cups chopped peeled apples
2 cups grated carrots
1/2 cup coconut
1/2 cup raisins
1/2 cup sliced almonds


Directions

In large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla. Mix well. Stir into dry ingredients just until moistened. Fold in remaining ingredients. Fill greased muffin tins 3/4 full. Bake at 375 degrees F for 20-25 minutes or until done.
