Grilled Sausages with Apple Salsa

Ingredients

Assorted precooked sausages, skins pricked
Assorted mustards, spicy or sweet
Tiny cornichon pickles
Small sourdough rolls, heated

Apple Salsa:
3 tablespoons sugar
1 1/2 tablespoons cider vinegar
1 1/2 tablespoons lemon juice
1/4 teaspoon red pepper flakes
3 sweet apples (Golden Delicious), peeled, cored, chopped
1 tablespoon fresh oregano, minced (or 1 teaspoon dried)

Yield: 1 1/2 cups
Prep time: 35 minutes, plus chilling


Directions

Stir sugar, vinegar, lemon juice and red pepper together in a small saucepan. Bring to a boil. Add apple, cover and reduce heat; cook gently until very soft. Mash with a potato masher until practically smooth. Stir in oregano. Serve chilled along with bite-size hunks of grilled sausages — a wonderful party appetizer.
