No-Fry French Fries

Ingredients

Yield: 4 servings

2 pounds large baking potatoes, scrubbed
1 teaspoon olive or vegetable oil
1 large garlic clove, minced
1 teaspoon salt
1/4 teaspoon coarsely ground black pepper


Directions

Preheat oven to 450 degrees F. Line jelly-roll pan with foil. Spray foil generously with vegetable cooking spray. Cut each potato lengthwise into 1/2-inch wide slices; cut each slice into 1/2-inch wide strips. Toss potatoes in jelly-roll pan with oil, garlic, salt and pepper to coat well. Bake 40 to 45 minutes, tossing once or twice, until potatoes are crisp and golden. Serve immediately.
