Ingredients

Yield: 6 servings

1 cup long grain white rice
1 tablespoon butter
1 onion, chopped
1 teaspoon salt
1 clove garlic, minced
1-2 large fresh tomatoes, chopped
1/2 teaspoon cumin
2 cups chicken broth


Directions

Brown the rice in a little bit of butter. Add remaining ingredients; cover and simmer until done and moisture is gone, approximately 20 minutes.
