Skillet Tomatoes and Zucchini

Ingredients

2 tablespoons butter or margarine
2 small zucchini, thinly sliced
1 medium onion, thinly sliced
2 medium tomatoes, sliced
1/2 teaspoon garlic salt
1/2 teaspoon basil
Dash of pepper
1 cup grated mozzarella cheese
1 cup seasoned croutons


Directions

Melt butter in a large skillet. Add zucchini and onion. Cook over medium heat until crisp-tender. Gently stir in tomatoes, garlic salt, basil and pepper. Cover; cook 3-5 minutes until tomatoes are tender. Remove from heat; sprinkle with cheese and croutons. Cover; let stand 2-3 minutes until cheese is melted.

Microwave method: Place butter in a 2 1/2-quart casserole dish or 9-inch square dish. Microwave on high 1 minute. Add zucchini and onion. Cook on high 3 minutes. Stir. Gently stir in tomatoes and seasonings. Cover and cook on high 3-5 minutes. Sprinkle with cheese and croutons. Cover. Let stand 3 minutes, until cheese is melted.
